Because regardless of how minimalist you are, the things you need to pick up along the way will surely fill up the space. Earn your cash, rewards, points or anything because the best way you can expand your ship storage is really... to buy a new additional ship.
When you have enough currency corresponding to the price of the ship you want, you can buy it from the game's NPC. There's no need to by several ones when you can have the large ship at the player's disposal. Does this mean more exploration on the "No Man's Sky" game? Indeed, because you didn't just came to discover the Center, but to explore the quintillion planets around you.
