First, you are not the only one unable to complete the game. In fact, no one is able to complete the game as long as they are playing on the Switch.
Second, there is, as of press time, no way to finish the game at all. Yes, you read that right, unfortunately.

Star Wars: Knights of the Old Republic II CANNOT be Completed on Switch
Star Wars: Knights of the Old Republic II – The Sith Lords cannot be completed if you are playing on the Nintendo Switch. This is because of, according to a report by IGN, "a game-breaking bug that's preventing players from being able to progress and finish the story."
A report by Kotaku notes that the game's developer, Aspyr, was pressed by a Twitter user named Daniel Moore about the fact that the game cannot be completed on the Switch. You can view the tweet as well as Aspyr's subsequent reply below:

According to reports, the game crashes after the Basilisk Crash cutscene, which plays when the player arrives on Onderon.
There is No Fix for the Bug, Unfortunately
As previously mentioned, there is no way fix for the game-breaking bug.
However, as seen in the tweet above from Aspyr, the company is aware of the issue. The company has also assured players that the team is already working on a patch that will fix the problem.
It should be noted that no date has been provided as of press time as to when the patch will be released to owners of the game.

Star Wars: Knights of the Old Republic – The Sith Lords, otherwise known as KOTOR II, is the sequel of Star Wars: Knights of the Old Republic developed by Obsidian Entertainment. The game was first released in 2004 for the Xbox, followed by a Microsoft Windows release the following year.
The game is set before the events of "Star Wars: Episode 1 – The Phantom Menace" and follows the story of a Jedi Knight in exile from the Jedi Order.
According to the report by Kotaku, Aspyr, a company that "made its name porting classic games to new systems," has been bringing old Star Wars titles to the Nintendo Switch. The company released KOTOR II for Switch a few weeks ago.
